Ms. Sarahi Barco

Founder & Executive Director

Ms. Sarahi Barco is the Founder and Executive Director of Edina Daycare Spanish Immersion. She founded Edina Daycare in 2018 with the vision of creating a high-quality early learning program where children thrive through Spanish immersion, meaningful relationships, and a nurturing environment.

Ms. Sarahi has been dedicated to the field of early childhood education since 2001, bringing over 25 years of experience in nurturing young learners, supporting families, and leading early childhood programs.

With a passion for high-quality early learning, Ms. Sarahi established Edina Daycare to provide a safe, culturally rich, and engaging environment inspired by the Reggio Emilia philosophy. She believes children learn best when they are encouraged to explore, express their ideas, develop independence, and build meaningful relationships through play and discovery.

As Executive Director, Ms. Sarahi provides leadership and mentorship to the teaching team while working closely with families to ensure every child receives exceptional care and a strong foundation for lifelong learning. Her commitment to excellence, innovation, and building a welcoming community continues to shape the mission and values of Edina Daycare Spanish Immersion.

Ms. Nessa has been a valued member of the Edina Daycare Spanish Immersion team since 2018 and brings 15 years of experience in early childhood education. As our Director and STEM Teacher, she is passionate about creating engaging learning experiences that inspire children to explore science, technology, engineering, and mathematics through hands-on discovery. Ms. Nessa is committed to supporting our teachers, partnering with families, and fostering a positive, nurturing environment where every child can thrive.

Ms. Sarahy Judyth, affectionately known as Judy, has been a member of the Edina Daycare Spanish Immersion team since 2018 and brings 10 years of experience in early childhood education. In addition to supporting children in the classroom, she assists with administration and marketing, helping showcase the wonderful experiences happening throughout our program. Ms. Judy enjoys building strong relationships with families and celebrating each child’s learning journey.

As an Assistant Teacher in our Oak Classroom, she is dedicated to creating a warm, caring, and nurturing environment where children feel safe, supported, and encouraged to learn every day.

She believes every child deserves to feel valued, supported, and encouraged to reach their full potential. Outside the classroom, she enjoys playing soccer, spending time with her family, and caring for animals.

Ms. Kelly serves as our Pre-K  Lead Teacher and is passionate about preparing children for a successful transition to kindergarten. She creates an engaging classroom where children develop early literacy, mathematics, social-emotional, and problem-solving skills while building confidence, independence, and a lifelong love of learning.

Experienced Educators, Authentic Spanish Immersion

Providing exceptional early childhood education starts with an exceptional team. Our educators maintain current CPR and First Aid certifications and participate in ongoing professional development throughout the year, helping us continually implement best practices in early childhood education.

Our team includes native Spanish speakers and highly fluent bilingual educators from several Spanish-speaking countries, giving children authentic exposure to the Spanish language and diverse cultures throughout their day. Every classroom is intentionally designed to combine meaningful Spanish immersion with high-quality early childhood education that supports children’s cognitive, social-emotional, language, and physical development.

Our Executive Director has earned the Minnesota Association for the Education of Young Children (MnAEYC) Early Childhood Director Credential, recognizing advanced knowledge and leadership in early childhood program administration. This achievement reflects Edina Daycare’s ongoing commitment to strong leadership, professional development, and excellence in early childhood education.
